Sweet Ricotta with Dark Chocolate

  • 2 cups ricotta cheese
  • ¼ cup confectioners sugar
  • 1 teaspoon vanilla extract
  • ¼ cup chopped dark chocolate
  1. Whip ricotta until fluffy.
  2. Add sugar and vanilla and mix until combined.
  3. Transfer ricotta to a cheesecloth lined strainer and let drain over a bowl for at least 30 minutes to remove excess liquid.
  4. Transfer to a bowl and fold in dark chocolate.
