Spiced Pecan Sweet Potato Cupcakes

  • 1 cup butter
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 cups mashed sweet potato
  • ⅔ cup sour cream
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 3 cups flour
  • 2 teaspoons cinnamon
  • ½ teaspoon ginger
  • ⅛ teaspoon nutmeg
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 cups chopped candied pecans
  1. In a medium bowl place flour, cinnamon, ginger, nutmeg, salt, baking powder, and baking soda in a bowl and whisk to incorporate air and break up any clumps. Set aside.
  2. In a separate bowl mix together sweet potatoes, sour cream, eggs, and vanilla extract. Set aside.
  3. In a stand mixer beat butter with sugars until smooth.
  4. Add half of the sweet potato mixture and mix until combined, scraping the sides of the bowl. Add the other half of the sweet potato mixture and finish combining with the sugar.
  5. Add the flour mixture and mix on low until just incorporated.
  6. Fill cupcake liners ⅔ full and top with chopped candied pecans.
  7. Bake at 350°F for 15-18 minutes or until a toothpick comes out clean.
