Apple Pie Crumb Bars

  • 3 large apples peeled & sliced
  • ½ cup sugar
  • 3 teaspoons cornstarch
  • 2 cup apple butter
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 3 cups all-purpose flour
  • 1 cup unsalted butter
  • 1 egg
  • ¼ teaspoon salt
  • ¼ teaspoon ground cinnamon
  1. Stir together the sugar and cornstarch and toss with apple slices. Set aside.
  2. Preheat the oven to 375°F and coat a 9x13 inch pan with butter or non-stick cooking spray.
  3. In a medium bowl, stir together 1 cup sugar, 3 cups flour, and baking powder. Mix in salt and cinnamon.
  4. Use a fork to blend in the butter and egg. Dough will be crumbly. Pat half of dough into the prepared pan.
  5. Spoon apple butter over the shortbread crust and spread lightly to distribute. Layer the apples over top of the apple butter.
  6. Crumble left over dough onto the apple layer.
  7. Bake for 45 minutes, or until brown on top. Cool completely before cutting into squares.
