Key Lime Cupcakes

  • 2 cups cake flour
  • 2½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • ¼ cup key lime juice
  • 2 teaspoons key lime zest
  • ½ cup sour cream
  • ⅔ cup whole milk
  • green food coloring (optional)
  1. Preheat 350°F and prepare cupcake pan with liners.
  2. Whisk flour with baking powder and salt.
  3. In separate bowl beat butter until smooth.
  4. Add sugar, beating until well blended.
  5. Beat in eggs one at a time, then add lime juice, grated lime zest and green food coloring, if using.
  6. Whisk together milk and sour cream and then add to mixture, mixing until well blended.
  7. Add flour mixture and mix until just combined.
  8. Fill cupcake liners half way and bake for 20 minutes or until a toothpick comes out clean.
  9. Allow to cool for 10 minutes prior to removing from pan.
  10. Cool completely before icing.
If you decide to use food coloring you only need a couple of drops to get that nice Key Lime color.
