Gluten Free Peanut Butter Cookies

These peanut butter cookies are a great gluten free alternative for those on a gluten free diet. We dipped these in melted dark chocolate for a gluten free version of our “you got chocolate on my peanut-butter” cookies. They are a little more crumbly than your typical peanut butter cookie but deliciously simple!

This recipe does not work well with natural peanut butter. You can use chunky or creamy depending on your preferences.
Ingredients
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup peanut butter
Instructions
  1. Cream together sugar and egg.
  2. Add peanut butter and vanilla extract until combined.
  3. Take a spoon full of batter and roll into a small ball.
  4. Place on cookie sheet 3 inches apart.
  5. Use a fork and push down on the center of the cookie in both directions to make a cross-hatch design.
  6. Sprinkle with sugar and Bake at 350°F for about 12 minutes, or until they start to brown on the edges.
Notes
These cookies will not brown on the top like most cookies so be careful not to over cook. Once they start to turn golden on the edges, test them by using a spatula to lift one off the pan. If the bottom is golden, they are ready.
