Sweet Ricotta with Dark Chocolate

- 2 cups ricotta cheese
- ¼ cup confectioners sugar
- 1 teaspoon vanilla extract
- ¼ cup chopped dark chocolate
- Whip ricotta until fluffy.
- Add sugar and vanilla and mix until combined.
- Transfer ricotta to a cheesecloth lined strainer and let drain over a bowl for at least 30 minutes to remove excess liquid.
- Transfer to a bowl and fold in dark chocolate.
