Ari recently hosted a brunch bridal shower, for one of her best friends since high school. While brainstorming about what we could bake, we decided on making two different kinds of cupcakes. What breakfast/brunch isn’t complete without cupcakes? We agreed that coffee and tea flavored cupcakes would be appropriate… and delicious! Salted Caramel Cocoa Coffee Cupcakes were a shoe-in for the coffee flavor, but we had to do some investigative work into what the bride’s favorite teas were to decide on the second flavor.

Instead of absorbing the flavors around them, they just become stronger and more intense. We believe that there are some combinations that were just made in heaven, and one of those is the pairing of blueberry and lemon. The idea for these cookies came courtesy of a head-strong toddler, who insisted that the chocolate chips in her mini-kitchen’s fake plastic chocolate chip cookies were, in fact, “Booberries.” We immediately thought, “That’s a great idea!” and off to the kitchen we went. . . . and a blueberry lemon twist on the traditional oatmeal raisin cookie was born.
These muffins are sweet and crumbly, and are packed with a great lemon and almond flavor.
